In celebration of Earth Day, performance artist Alison Knowles is making a really big salad. While the video above is from the Tate Gallery in London, Knowles' salad-making piece is currently being performed at the Chelsea Market Passage on the High Line.

The Make a Salad performance art was first performed in 1962. Since then, Knowles has brought it around the world. Watch as she drops and assembles an absurd amount of salad ingredients, then taste the finished product. As you eat the salad, you become part of the performance.
