Top Chef: New York [10 PM, Bravo] - The remaining chefs travel to Blue Hill Farm in Massachusetts to gather their own ingredients and prepare a regional produce/sustainable agriculture dinner. Just a quick aside: This recession is going to screw the transition to locally-grown ingredients. When money becomes a primary consideration, the choice of a $3 organic carrot grown by some crunchy dude two towns over will lose to the 5 pounds of carrots for 99 cents that were grown in Texas. We would care but we don't eat carrots. Another aside: It's fun to watch Padma walk around a farm in heels.

Spectacle: Elvis Costello With... [9 PM, Sundance] - Rufus Wainwright talks to Elvis about everything from his family to his role in the gay community. Performances include a duet with his mother, Kate McGarrigle and a cover of a Loudon Wainwright III with Elvis. This show is finding its footing and it will not be long - mark our words - until there is a network variety show with a more middle-of-the-road talent like Michael Bublé that features interviews, singing and possibly topical sketches. It's going to be like the late 50s all over again: dancing shows, singing shows and Westerns (Friday Night Lights?).

Jimmy Kimmel Live [12:05 AM, ABC] - Mickey Rourke
Letterman had Salma last night and Leno coaxed Mickey through a interview, so now those leads attempt eight more minutes of charming banter. Before Jay hits primetime in the fall, Conan will have a limited window of first crack at the good guests, fresh anecdotes and dense Southland celebrity population. That will help to make up for the nine million SNL hosts and cast members he's counted on to fill out his roster over the years.

Good Eats [8 PM, Food] - Alton Brown explores ground beef and traditional meat pies in two primetime episodes of Food Network's best show. Iron Chef America is a close second (it also features Alton), but rarely do we watch any show as actively as Good Eats. Not to start what would be an awesome and slappy feud, but it seems like Ted Allen is trying to position himself as the waxing man's Alton Brown, as he now hosts more stylish (but less edifying) versions of Alton's programs on the same network.

KILL

CSI: NY [10 PM, CBS] - Ripped from the cinemas, the tight-jawed detectives are on the case when a shopper dies after bridezillas savagely fight over a dress. Our favorite thing about this show is to watch for the actual NY locations as they are mixed in with the Downtown LA-for-Red Hook stuff. We also enjoy the over-medium dialogue. Here's an exchange we hope is in tonight's episode:

MAC: What is the saying, 'something borrowed, something blue?'
A beat.
STELLA: Something dead.

And one more:

STELLA: Always a bridesmaid, huh?
MAC: Now she'll never be a bride.

OK, one last one:

STELLA: She didn't even get a chance to choose a China pattern for her registry.
MAC: At least she won't have to write any thank you notes.
